  15. 1 tomato
  16. 10 green olives
  17. 100 ml water
  18. 1 vegetable/chicken stock pot
  19. 1/2 kg chicken breast cut in little pieces

Steps to make to make Chicken Fricasé (Cuban Style)

  1. Prepare all the ingredients and marinate the chicken with all the spices mentioned above
  2. Sauté onion (gas mark 4) for 3 min then add garlic for another 2 minutes. In a different pot boil water and add the stock pot for 2 minutes then leave it aside
  3. Add tomatoes saute for 2 minutes, add red pepper sauté for another 2 minutes
  4. Add tomato purée sauce, bay leaves, chicken,
  5. Olives, coriander, sweet potato, a sprinkle of cumin, paprika, salt and pepper
  6. Stir everything, cover (still in gas mark 4). Stir then every 20 minutes and cook for about 1 hour
  7. Serve along with rice, plantain and avocado 😋
