  4. Make Fried vermicelli noodle- crushed dry vermicelli noodle to small pieces, I use about a couple of handful. Heat up 1-2 cup of cooking oil in the small pan or saucepan until high heat the. add small amount of crunch vermicelli noodles at a time, fry noodle until golden brown.
  5. Season with soy sauce, fish sauce. Taste and add more sauce if prefer. Add eggs in, I normally leave it for 2-3 minutes as I like my egg yolk runny but you can leave it cook for longer.
  6. Place into a bowl garnish with fried garlic, fried vermicelli noodle, soy sauce and ginger. Top with some ground pepper.
